Ridiculous vibrancy: half-raw, all vegan beetroot "hummus." Going to eat this for dinner with non-vegan goat cheese and bread.


Non-specific recipe (loosely adapted and very different from the River Cottage version):

Roasted beets
Raw sunflower seeds (soaked in water overnight, reasoning here)
Garlic
Raw tahini
Lemon juice
Cumin
Salt, pepper
Olive oil
Water

breakfast

Relaxed morning: made some Scottish oatcakes last night, but they're more like unsweetened oatmeal shortbread; with cream cheese, cucumbers & leftover salmon with basil. 

No lunch today because we're going to see my dad before he leaves for Fiji. Jealous.

TV dinner (I've been watching the River Cottage series): saffron brown rice, zucchini, grilled sockeye; couldn't finish it all. 

I think I'm gonna make some oat cakes later because we have no bread in the house.

Variations on the best technique for leftover corn tortillas EVER (from 101Cookbooks): fry some veggies (I used sliced garlic stems and leeks, another day sliced okra); add a beaten egg, let the bottom set; flop a tortilla onto the runny egg; flip over.

Spoiled myself today: smoked sockeye trim from The Daily Catch with arugula/cream cheese and a bagel that sucked (I miss NY). And some tea, of course.
